DAK is known for their unique experimental coffees and every year they choose a playful yet refined offering for the festive season. This year’s is a Colombian coffee co-fermented with orange, cardamom, and a touch of cinnamon, then honey processed. Gekkou, meaning moonlight, is a shade grown matcha with soft, blue-green tencha leaves. It was produced by the Nishide family, where three generations work side by side, and slowly stone-milled in-house. The result is a smooth, silky matcha with notes of chawanmushi (savory egg custard), almond cookie, and hazelnut praline.

Our tasting panel couldn’t believe this coffee was a decaf because of its incredible clarity of flavor. While most Ethiopian coffee is grown by smallholder farmers, this lot comes from an individual estate owned by Abdo Aba Mecha and his meticulous care is clear in the cup. We tasted milk chocolate, dark berries, and white peach.

Over the past decade, Mexico's specialty coffee scene has flourished, driven in large part by the passion of Mexican baristas and influenced by socio-political dynamics. As the landscape evolves, there's a notable push towards enhanced quality, innovative processing, and diverse varieties, resulting in some truly exceptional coffees. This well-curated blend provides a sensory journey through the world of Mexican coffee with a medley of distinct varieties, washed and naturally processed, brought together by multiple producers to capture the dynamic narrative of the country in every sip. Expect a complex cup of cataloupe, clementine, and honeysuckle.
From the very first sip, the sweetness and vibrancy of this decaf delighted our palates. La Angostura was “mountain water processed”, an organic process similar to Swiss Water which delicately removes caffeine while preserving the coffee’s nuanced depth of flavor. We tasted dry berries, sugarcane, cocoa, burnt caramel, citrus zest, and sweet potato dessert.
This coffee comes from Nilson Lopez’s farm which has a long history of winning Colombia’s competitive Cup of Excellence. A traditional washed Gesha, it has clean flavors of peach, orange marmalade, and beautiful florals.
